INGREDIENTS FOR THE BROTH:

La Vera DOP paprika
Powdered saffron
Natural pear tomato (El Modesto)
Amontillado wine
Spring garlic
Wagyu
Veal bone broth
EVOO

Prepare the broth before starting the recipe

We prepare the broth with pork bones roasted in the oven and ribs seared in the pot. Once the broth is ready, we discard the bones and set the broth aside with the ribs.

STEP BY STEP

1.- Sear the wagyu

Brown the wagyu fillets in the paella pan with a little oil until they are well seared on the outside. Remove them and set them aside for the end.

In the same oil, add the chopped spring garlic along with the pieces of wagyu fat. Cook them for a few minutes until they start to brown and release all their flavor.

3.- Add the tomato, paprika, and wine

Add the paprika and stir quickly to prevent it from burning. Add the crushed tomato and cook until it reduces.
Then pour in the wine and let the alcohol evaporate while continuing to stir gently.
