This is my seventh publication, with a foreword by gastronome and writer Juan Gayá, with 101 rice dishes, some useful tips, and my own photos. 80 recipes, not featured in any of my other books, 44 recipes from the Valencian Community, some from my own author's, some of my own contributions, and a sample of rice dishes from all over the country, which I have cooked with interest and respect: from Andalusia, Aragon, the Balearic Islands, the Canary Islands, Cantabria, Castilla-La Mancha, Castilla-León, Catalonia, Madrid, the Autonomous Community of Navarre, Extremadura, Galicia, the Basque Country, the Principality of Asturias, the Region of Murcia, La Rioja. As an exception, since I have no reference to rice in the cities of Ceuta and Melilla, I am sharing couscous, a traditional dish influenced by the Valencian Community. Moroccan."
