Suitable for gas fires, gas burners, wood fires and ovens.

During cleaning, it is recommended to use the soft side of the scouring pad, because if its enamel is scratched, it will lose its anti-rust qualities.

The enamelled paella pan has a surface that is slightly convex as well as sloping sides, which allows the oil to accumulate in the centre, helping during the preliminary phases of the preparation of the paella, and allowing the sofrito to be moved to the sides for when the rice is added.

We should point out that the enamelled paella can make a socarrat in the same way as the polished paella and that everything said to the contrary is a false myth. This is because the socarrat comes from the caramelisation of the sugar in the rice starch and this phenomenon (technically called Maillard's) occurs at relatively low temperatures and much lower than those reached by our paellas, which means that any paella is capable of this.
