Preparation time: 30 minutes. Cooking time: 16 minutes. Serves: 2.

INGREDIENTS:

1 cooked octopus (400gr) 2 leeks
1 green Italian pepper 4 ripe pear tomatoes
700 gr of noodles n2 2 L homemade stock
1 tablespoon paprika 250 ml of cava
Olive oil Salt (to our liking)

TIME TO PERFORM EACH STEP

 1- Fry the noodles 2 Minutes
2- Cut the octopus and fry it 6 Minutes
 3- Cut the leek and green pepper, sauté 5 Minutes
4- Grate the tomatoes, add them to the sofrito and reduce it. 6 Minutes
 5- Add the paprika, mix it with the sofrito 2 Minutes
6 - Add a splash of cava and let it reduce. 4 Minutes
7 - Add the noodles and broth, let it cook and add pieces of octopus. 16 Minutes
8 - Finish by adding the octopus tentacles and let it rest. 5 Minutes
Total: 46 Minutes

STEP BY STEP

TOAST THE NOODLES AND CUT THE OCTOPUS

The first step for this fideua recipe is to toast the noodles. We put them in the paella pan and heat until they take on a brown/orange color. Once we have this color, we set the noodles aside.

Take the octopus - previously cooked - cut off the tentacles and chop the rest. Fry the meat for 2 minutes and set aside.

CUT THE VEGETABLES AND FRY THEM

Next, we chop the leek and green pepper.

Add the chopped vegetables to the paella pan and fry them.

ADD THE TOMATO AND THE PAPRIKA

Crush or grate the two pear tomatoes and add them to your vegetable stir-fry.

Reduce the tomato and add a tablespoon of paprika, then stir a couple of times to mix everything well.

A SNAP OF CAVA AND A MOUNTAIN OF NOODLES

After mixing the paprika, add a good splash of cava, let it reduce as much as possible as you did with the tomato previously.

Once the cava has reduced, add the noodles and stir a few more times to mix it with the sofrito.

FISH FUMET AND ALL FINISHED

With the noodles placed in the paella pan, add the hot homemade stock and let it cook.

After 6 minutes of adding the broth and allowing the fideua to cook, add the octopus pieces. In the last 2 minutes, add the octopus tentacles.

NOT EVEN THE OCTOPUS CAN TAKE THE SPOON FROM US

After following these steps, you will have an octopus and leek fideua on your table. If the octopus were still alive, it would eat your fideua because it is sure to be so good, rice lovers!
