INGREDIENTS:

1 cooked octopus (400gr)
2 leeks
1 green Italian pepper
4 ripe pear tomatoes
200 gr of noodles n2
2 L homemade stock
1 tablespoon paprika
250 ml of cava
Olive oil
Salt (to our liking)

STEP BY STEP

1.- Fry the noodles

The first step for this fideua recipe is to toast the noodles. We put them in the paella pan and heat until they take on a brown/orange color. Once we have this color, we set the noodles aside.

Take the octopus - previously cooked - cut off the tentacles and chop the rest. Fry the meat for 2 minutes and set aside.

Next, we chop the leek and green pepper.

Add the chopped vegetables to the paella pan and fry them.

Crush or grate the two pear tomatoes and add them to your vegetable stir-fry.
