Paella Master - become a rice master with Original Paella

Being a real master rice cooker is not an easy task, it requires knowing the tools and utensils, the characteristics and properties of the ingredients, the exact cooking point of the rice... Of course, this does not imply that it is an impossible task, there is nothing that, with a little sweat, tears and a lot of rice can be learned and mastered to become a new paella master.

Our own experience behind the stove has shown us over the years that the art of good rice is coveted by many, from amateurs, cooks or foodies to apprentice cooks on their way to becoming the chef of their own kitchen. It is because of this that multiple years ago we have been offering the Paella Master course, where some of the best paella masters in Valencia will teach you all their tricks, techniques and rice knowledge.

What is the Paella Master course?

Our Paella Master course consists of 15 hours, to be carried out over 3 sessions divided into 3 days.

5 hours a day, in a professional kitchen, cooking rice dishes with renowned professionals without interruption, it is a practical and face-to-face course where the student develops their knowledge in a practical way following the advice and lessons of a true rice master, with thousands of hours of experience, all concentrated in 3 days, in which we will cook a wide variety of rice dishes in all their forms (dry, creamy, brothy...)

In short, it is a great opportunity to, in just 3 days, build the foundations and knowledge that with practice will make you a true rice professional.

This course is aimed primarily at working professionals who want to significantly improve their rice dishes, or even those who plan to open businesses linked to the world of paellas and rice dishes (takeaway, delivery, rice restaurants, restaurants, giant paellas, etc.)

We have interviewed our latest students from out latest course, dated 14, 15 and 16 of october, Txema, boss from the company 50 raziones and Octavio, a profesional rice maker interested in opening it's own restaurant, so you can see their own opinion. To facilitate the interview and answer some key questions, we offered multiple open-ended questions which they were able to answer during our conversation:

What was your main motivation/objective for participating in the course?

Txema: I am interested in improving my product and restaurant, I want to be able to make giant paellas and I found that the teachings of the course were perfect for my goal.

Octavio: My goal is to set up a business to make rice, a small restaurant. A friend of mine recommended Original Paella to train me and after visiting their website and seeing what they had to offer, I decided to sign up for the course.

What would you highlight from what you have learned?

Txema: The practicality and technical knowledge have helped me to improve the efficiency of my kitchen and to choose better quality products.

Octavio: Business management, learning to calculate the price of portions, products and pitfalls seems very valuable to me, in addition to learning how to eat rice like a professional.

Was there any part of the course that you were particularly excited/interested in learning about?

Txema: Not specifically, although if I had to highlight one point, it would be learning how to make a better product, such as the steps of water evaporation when making paella.

Octavio: I would say that everything in general, from how to manage the business to making rice, everything has been very useful to me.

With all the knowledge you have acquired, what is your next goal, what do you think you will be able to use it for?

Txema: To improve the quality and efficiency of the kitchen and products, I have learned certain tricks that allow me to simplify the steps necessary to make rice and also make them more delicious and visually better.

Octavio: To open my restaurant, we will start with a small one, but we will see how things go and we will see about expanding in the future.

What is the teaching content?

During the course, your instructor will teach you an extensive repertoire of techniques, tips, information and technical resources, from the basics, such as how to handle the paella pan or the characteristics of the ingredients, to more professional sections, such as how to obtain the socarrat, the variety of rice to use depending on the type of recipe and much more.

How to obtain the socarrat

What is the didactic material?

The course includes as didactic material a dossier that includes explanations about the varieties of rice, technical data sheets of the dishes to be cooked, including their preparation method, cost calculation and scandals, made in spreadsheets to be adapted according to the number of diners, as well as an explanation of all the ingredients and utensils to make paellas and rice dishes in individual work stations, together with their work apron.

How much does the Paella Master course cost?

The price of the Paella Master course may vary depending on the number of students attending. In order to make the training as professional as possible, the number of students is limited to 1 to 5 participants, with certain exceptions.

The costs of the course would be:

1 student = 1056€ / student

2 students= 880€ / student

3 students= 748€ / student

4 students= 660€ / student

5 to 10 students= 600€ / student

Please note that the course price does not include the corresponding VAT (21% training services).

How do I reserve a spot?

To reserve a spot in Paella Master, a deposit of 300€ is requested in advance as a sign of interest and intention to participate in the course, a week before the course will be paid in full depending on the number of students who finally make the course.

Frequently Asked Questions

How can I participate in the rice course?

Our teacher is also a teacher at other very prestigious training centres such as the CEU San Pablo University and tourist development centres. He also works as an executive chef in several restaurants and rice restaurants, including the Real Club Náutico de Valencia. That is why there are two ways to participate in the training activities:

1- Open groups:

Our next group course will be on February 3, 4 and 5, 2025. This course can have up to 10 students and the students adapt to the scheduled and planned dates.

2- Personal or business courses:

In this case, the student or company proposes a couple of alternative dates at least one month in advance. We try to adapt to these dates or, failing that, we propose those that are closer and more feasible. This option is the most popular choice since, although the cost is a little higher, it is a real luxury to have an expert just for you who quickly adapts to your level of knowledge and who develops the training action towards your objectives (delivery, take-away, catering, rice dishes...)

Can students from other countries participate?

Of course, our rice course is open to all potential rice masters, regardless of their place of origin.

Please note that our courses are conducted in Spanish and English (with an interpreter).

Will I receive a diploma/document showing that I have participated in the course?

Of course, we want you to be able to proudly show off at home that you participated in our Paella Master training. You will receive your diploma at the end of your course.
