Types of paella pans

To better explain its use, we could say that the table is divided into three parts:

Traditional gas burners

Traditional gas burners: Paella burners or round tube burners connect to the propane, butane or natural gas supply cylinder, they are specifically designed for outdoor use. These use a conventional gas regulator for gas stoves that works with an input pressure of between 28 to 30mbar, being easy to use and adapting to different sizes of paella pans.

They differ from other paella burners because they have round-shaped tubes, which means that their ignition holes are in a straight and vertical position around their rings, which allows direct application to the lower surface of the paella pan.

Professional gas burner / flat tube

Professional gas burner: The professional paella burner, these are approved for both indoors and outdoors since they have a thermocouple valve that serves as a safety barrier, because the thermocouple valve, when it cools, interrupts the gas outlet, preventing potential leaks or unwanted gas buildup. They stand out for having a very uniform heat distribution at the base of the paella pan or any container that is used.

It is different from other paella burners because of its concentric tubes are flatter and more flattened, this means that the ignition holes point to the sides or outwards, that is, this model of gas burner opens the fire outwards, which guarantees that the flame offers a better distribution of heat and at the same size as the traditional burner, it can cook with larger paella pans.

High-power gas burner

High-power gas burners: High-power burners are characterized by being flat-tube burners, they are of great quality/price, offering 25% more power than traditional burners and better distribution of heat between their rings. Their main difference from the professionals is that they do not have thermocouple valves, since their use is limited to outdoors.

Similar to the professional gas burner, its concentric tubes are flatter and flattened, this means that the ignition holes point to the sides or outwards, that is, this model of gas burner opens the fire outwards, which that guarantees that the flame offers a better distribution of heat and at the same size as the traditional burner, it can cook with larger paella pans.

Table division

The second, in the center, gives us the size of the paella burner in millimeters, that is, a 500 mm burner would actually be 50 cm.

The third, on the rightmost part and probably the most important, we indicate the size of the correct paella in centimeters, from the upper diameter of the paella, not counting its handles.

You can see in the table provided that some of the paella size ranges are crossed out, this is because in these sizes our paella would be large for the inner ring, but small for the outer ring, therefore, It would distribute the heat correctly and is, due to this, not recommended for this paellero.
