INGREDIENTS:

800 gr rice j. Sendra
300 gr of pumpkin
1kg of pig ribs
2 tomatoes
40 saffron
Salt ( to our liking)
100 ml Extra virgin olive oil
1 tablespoon of sweet paprika

STEP-BY-STEP RECIPE

Add the extra virgin olive oil, which will be used to level the paella pan. The oil should be centered. Turn on the heat in the center to heat the oil.

Fry the ribs over low heat. They should be well browned without burning.

Once the ribs are well browned, move them to the edges of the pan and add the diced squash. Fry for 5 minutes and then remove.

Add the red onion, a little salt to release its juices, and cook over low heat for about 15 minutes.

Add the grated tomato and sweet paprika and let the sofrito cook over low heat until the liquid evaporates completely and the rice turns a deep dark color.

Now it's time to add the water needed to cook the rice. In our case, we'll use 3 parts water to 1 part rice. Add 1.2 liters of water and place the paella-easy magnet at the water level.

After 40 minutes of cooking the meat, and once the broth level reaches the mark we made with the paella-easy magnet, it's time to add the rice. Divide the rice evenly and let it cook for 16 minutes. Cook for the first 5 minutes over high heat, the next 5 minutes over medium heat, and the last 5 minutes over low heat.
