Albufera rice, which gets its name from being produced in the Albufera natural park, is a short, round grain rice with the Valencia designation of origin.

Created relatively recently, genetically, it is a combination of the appreciated varieties of rice most used to make paella, such as the Bomba rice variety and the Senia rice variety, taking from each of them the most appreciated characteristics for cooking paellas and rice dishes, such as the high capacity for absorbing flavors from the base or broth that we have prepared for the rice, a characteristic of the senia variety, and the grain's resistance to overcooking, which prevents, to a certain extent, the grain of rice from opening when overcooking, “passtrandose” (undesired effect in the cooking of the rice) characteristic of the Bomba rice variety.

The Albufera rice variety is, therefore, an ideal rice for any type of paella since it is very tasty and at the same time has a resistance that makes it a very pleasant rice to cook, especially suitable for restaurants, catering or takeaway. , or even in the domestic sphere for any type of rice, whether dry, sticky or soupy.
