The polished steel paella pan or carbon steel paella pan, also known as iron paella, is the one traditionally used to prepare Valencian paella. Made of steel, it distributes heat quickly and evenly. Its thickness gives it great rigidity and resistance, and the bottom of the paella has small indentations for better heat distribution.
Its surface is slightly convex and has sloped sides, which allows the oil to accumulate in the center, helping during the early stages of paella preparation and making it easier to move the sofrito to the sides as it cooks.
How many servings can I get from a 22 cm paella pan?
The paella pan, depending on the height of the rice used in its preparation, has a different capacity for servings of paella per person; you can check the description or the second photo of our products to see its capacity, which will vary depending on the height of the rice layer and the diameter of the paella.
The paella can be prepared in 3 different ways, depending on the amount of rice we use in our paella: thin rice layer, also known as Valencian-style paella, medium rice layer, where we fill the paella halfway, and full rice layer, where we fill the paella with rice to its limits.
