The polished steel paella pan or carbon steel paella pan, also known as iron paella, is the one traditionally used to prepare Valencian paella. Made of steel, it distributes heat quickly and evenly. Its thickness gives it great rigidity and resistance, and the bottom of the paella has small indentations for better heat distribution.

Its surface is slightly convex and has sloped sides, which allows the oil to accumulate in the center, helping during the early stages of paella preparation and making it easier to move the sofrito to the sides as it cooks.

How many servings can I get from a 24 cm paella pan?

The paella pan, depending on the height of the rice used in its preparation, has a different capacity for servings of paella per person; you can check the description or the second photo of our products to see its capacity, which will vary depending on the height of the rice layer and the diameter of the paella.

The paella can be prepared in 3 different ways, depending on the amount of rice we use in our paella: thin rice layer, also known as Valencian-style paellamedium rice layer, where we fill the paella halfway, and full rice layer, where we fill the paella with rice to its limits.

As any object made with in iron, it can rust. Because of this, when its production is finished, the paella pan has added a special anti-rust layer which protects it from rust and keeps it in excelent condition.

Once you recive it in your home, you will need the eliminate this protective layer before you use said paella pan for the first time, this also will work for us as a heat treatment so as to avoid future deformataions provoqued by continuous use or high heat.

Eliminating rust out of our paella

Even with all these steps, it could happen by accident that you forgot to aply the layer of protective oil and our paella pan has being left rusted because of it.

We reccomend the cleaning product Asevi to eliminate rust from our paella. We only need to aply the product in the affected zone and clean it with water. When the rust has being retired, we reccomend to clean, dry and apply a layer of vegetal oil to our paella pan to avoid future accidents.
